    when a house collapses, what time of day does it collapse? Isn't it always at a certain time?

    No its not at a certain time.

    Once it hits the final stage you can usually plan when it will fall, but you can't always plan when it will hit the final stage, so it might vary by several hours.

    I've been to a couple recently and they fell at different times of the day.

    If the house obtains the IDOC status at 3AM then some time between
    9AM to 10AM it will drop, unless there is a server update which may
    reset the timer back to the previous hour, so it may take an extra hour
    to fall. The server in question is the server which handles the accounting
    data of the owning player's account.
